These berry muffins make the perfect snack, lunchbox and picnic basket addition for the whole family. Suitable for children 12 months and older
100ml light (flavoured) extra virgin olive oil
2 eggs, lightly beaten
½ teaspoon vanilla bean paste
½ cup sugar
½ cup rolled oats
¾ cup desiccated coconut
1 ½ cups self raising flour (can use wholemeal and add a little more milk)
1 cup full cream milk
1 cup fresh or frozen berries (or other soft or stewed fruit)
To serve with Muffins:
1 serve (6 scoops) of Biostime SN-2 BIO PLUS Premium Organic Toddler Milk Drink powder
180mL cool, boiled water
Preheat the oven to 180 degrees Celsius or 170 degrees fan forced oven
Grease 12 pan muffin pan or line with muffin wrappers
Mix together oil, eggs, vanilla bean and sugar until smooth and fluffy
Add oats and coconut, and stir until smooth
Add flour and milk gradually to form a batter
Fold in the berries lightly
Bake for 20minutes
Once muffins are ready, serve with a cool boiled refreshing glass of Biostime SN-2 BIO PLUS Premium Organic Toddler Milk Drink.
